Fresh Is Best!

We had bought a great selection of vegetables at the Bayview Farmer's Market over the weekend and specifically a bag of veggies for a stir fry from Pam's Place. This farm has a enticing way of displaying produce that gets me every time. I have yet to go the farmer's market without picking up a few things from them. All I had to do was cook the rice while Brian cut the chicken. After completing those two tasks, it was just a matter of opening the bag of goodies and throwing them in the stir-fry pan to be cooked.

Plating was a snap too. Of course, the easiest part was eating this "go-to" meal. All those fresh flavors really came through and made this supper a success. The colors were almost as vibrant cooked as they were in the bag, which is not always the case when cooking vegetables. With only the two of us for dinner, we even get the benefit of some left-overs for lunch tomorrow. Oh, happy day!
